Be kind and generous. That’s a top priority in our family. Our fig tree continues to spoon us heaps of generosity.  After friends and family gather their loot, the remaining less camera ready ones become fig jam. My first attempt…I shouldn’t take credit considering it’s a perfect food to begin with. I looked around for recipes but just piles of sugar so I made modifications to let the fruit sing its song. 

6 cups chopped figs (I scrapped off most of the green layer)

1/4 cup honey

1/4 cup sugar

Juice of 1 large lemon 

2 tsp instant pectin (if you don’t have this, just add another 2 TBS of lemon)

Toss it all together, let it come to a boil. Lower heat to low simmer and stir it occasionally for about 1 hour.  Once thickened, pulse it thorough a food processor a few times and ladle into sterile jars. Let cool completely on counter before refrigerating and storing in fridge. With instant pectin, use within 3 months.
